Traditionally made in the northwestern area of Venezuela, this is one of Venezuela’s most unique cheese creations. This cheese is full of tradition: fresh with a natural rind and made from grade A cow’s pasteurized milk, a well-guarded combination of cultures and rennets and an old-fashioned ripening process. This cheese is mild with a slightly bitter taste, characterized by its particularly spongy and chewy texture with many irregular holes in its paste. The beauty of this cheese is in its complexity – it is why it serves for any purpose: alone as a table cheese, with sweet plantains, Venezuelan arepas, or simply bread!
